Chicken with Pesto and Sweet Potatoes
Best part? You make them BOTH in the same crockpot. I know. Genius, right?!
3-4 Boneless, skinless chicken breasts
Jar of pesto (or make your own fresh in the summertime!)
3-4 slices of smoked Gouda cheese (or your cheese of choice)
2-4 sweet potatoes
As you can tell, this recipe is very flexible! Just place your chicken in the bottom of the crockpot. Place one slice of cheese over each breast. Spoon a dollop (perhaps 1-2 T) of pesto over each piece of chicken, and spread to cover. Top with a piece of aluminum foil. Scrub and prick sweet potatoes (however many you need for dinner!), and place them on top of the aluminum foil. Cover with the lid and cook on high for 4-5 hours or on low for 6-7.
I intended to serve this with risotto, but the day got busy, so it just became applesauce and garlic bread. :-)
